Decadent Fudge Cake

Ingredients:
1 cup butter softened
1 1/2 cups sugar
4 eggs
1/2 teaspoon baking soda
1 cup buttermilk
2 1/2 cups flour
1 1/2 cups mini chocolate chips
2(4oz) baking chocolate melted and cooled
1/3 cup chocolate syrup
2 teaspoons vanilla
4 oz white chocolate, chopped
2 tablespoons plus 2 teaspoons shortening divided
Directions:
cream butter in large mixing bowl


gradually add sugar


add eggs one at a time beating after each egg


Dissolve soda in butter milk stirring well 


Add to creamed mixture alternately with flour


add 1 cup mini chocolate chips, melted chocolate, chocolate syrup and vanilla stirring just until blended, do not over beat


spoon batter into a greased and floured 10 inch bundt pan


bake at 300*F for 1 hour and 25-35 minutes or until cake springs back when touched
immediately invert cake onto serving platter, cool completely


combine 4 oz white chocolate and 2 tablespoons of shortening in top of a double boiler, bring water to a boil,  reduce heat to low cook until mixture is melted and smooth
remove from heat
drizzle melted white chocolate over cooled cake


melt remaining 1/2 cup mini chocolate chips and 2 teaspoons shortening in small sauce pan over low heat, stir until smooth remove from heat
let cool
drizzle over white chocolate

Strawberry Rhubarb Crisp

This one is for my husband who loves rhubarb, I'm not so crazy about it, which he don't mind because then he gets the whole pan!  And the kids!

Preheat oven to 350*F


Ingredients:
2 cups flour
2 cups brown sugar
1 cup butter
2 cups oats
6 cups rhubarb
1 cup sugar
2 Tablespoons cornstarch
1 cup water
1 teaspoon vanilla
1 pkg (3 oz) strawberry gelatin

Directions:
mix flour brown sugar and butter in bowl
add oats mix, until crumbly
press half in bottom of 9 X 13 pan
top with rhubarb
In saucepan combine sugar, cornstarch, and water, boil until thick
remove from heat
add vanilla
pour on rhubarb
sprinkle gelatin over
top with remaining crumb mixture
Bake for 40-45 minutes

Honey Whole Wheat Bread

OK I know its not a dessert, BUT if you put homemade raspberry freezer jam on fresh bread, its dessert!


Makes 2 loaves


Ingredients:
3 cups whole wheat flour
1/3 cup honey
1/4 cup shortening
1 tablespoon salt
2 packages (4 1/2 teaspoons) yeast
2 1/4 cups very warm water
3-4 cups all purpose flour

Instructions:
Note:  this is the way i do it, not the way the book says so.  :)

In kitchen aid mixer, add water honey shortening salt and whole wheat flour.  
start mixing on low
add yeast.
let mix until whole wheat flour is all mixed in
then start adding the all purpose flour, i usually do 1 cup at a time.  
Add until just slightly sticky when you touch it.  
Spray pans, split dough put in pans.  
Put pans in COLD oven then turn oven on to 350*F and set timer for 30  minutes, bake until golden brown on top.
I don't let the bread rise in the pans or in the bowl.  

Lemon Bars

For Crust:
Preheat oven to 350*F
1 3/4 cup flour
1/2 cup powdered sugar
1 cup butter
Mix together, press in bottom of 9X13 pan Bake for 20 minutes

For topping:
4 eggs, beaten
2 cups sugar
5 tablespoons lemon juice
Mix, pour on top of crust put back in oven for 20 minutes
sprinkle powdered sugar on top
cool

Mississippi Mud Pie

Didn't get a picture of this one but its so worth making!!

Ingredients:

1 8 inch chocolate crumb crust ( i just used smashed oreos and 1 stick butter)
1 cup powdered sugar
1 cup chocolate chips
1/4 cup butter cut up
1/4 cup heavy whipping cream
2 tablespoons light corn syrup
1 teaspoon vanilla
3/4 cup chopped nuts
2 pints coffee ice cream softened slightly divided.
whipped cream

Directions:

Heat sugar, chocolate chips, butter cream and corn syrup in small sauce pan over low heat, stirring constantly until butter is melted and mixture is smooth.

remove from heat, add vanilla, cool until sightly warm

drizzle 1/3 cup of chocolate sauce in bottom of crust.

sprinkle with 1/4 cup nuts

layer 1 pint ice cream

freeze for 1 hour

repeat chocolate sauce, nuts ice cream

drizzle remaining sauce on top sprinkle with nuts freeze for 2 hours

top with whipped cream before serving

Turtle Pie













Ingredients:

1 baked 9 inch pie shell

Ingredients for pie shell:
-1 cup flour
- 1/3 plus 1 tablespoon shortening
- 1/4 teaspoon salt
-2 to 3 tablespoons cold water
Directions for pie shell:
- mix flour shorting and salt together, add water mix with hands until it forms a ball. roll out until size of pan, place in pan, bake 350*F for 10 minutes
set aside.

12 caramels unwrapped
1 (14oz) can sweetened condensed milk
2 (1-oz) squares unsweetened chocolate
1/4 cup butter
2 eggs
2 tablespoons water
1 teaspoon vanilla
dash of salt
1/2 cup chopped pecans

Directions:

Lower temp of oven to 325*F

In medium pan over low heat melt caramels and 1/3 cup sweetened condensed milk, pour on bottom of prepared pie crust

Using same pan as caramel mixture, melt chocolate and butter.

In large mixing bowl beat eggs, remaining sweetened condensed milk, water, vanilla and salt. add chocolate, mix well.

Pour into pie shell

Top with pecans

Bake 35 minutes or until center of pie is set.

Cool

Chill.

Refrigerate leftovers.

Fudgy Chocolate Layer Cake

One cake that you follow directions on! I usually make up my own and figure the recipe is just there for guide lines, but since its the first time making this one I followed the directions. Don't think I will change it either, turned out SO DELICIOUS!!!








Makes 12 Servings
Ingredients:
1 3/4 cups flour
1 cup less 1 tablespoon cocoa powder
1 1/4 teaspoon baking soda
1/8 teaspoon salt
3/4 cup (1 1/2 sticks) butter
2/3 cup granulated sugar
2/3 cup packed brown sugar
2 eggs
2 teaspoons vanilla
1 1/2 cups buttermilk

Frosting and Garnish:
1/2 cup (1 stick) butter
1 1/2 cup powdered sugar
3 ounces (3 squares) baking chocolate, melted
2 teaspoons vanilla
chocolate shavings-optional

1) preheat oven to 350*F. line bottoms of 2 9 in round pans with waxed paper. Grease sides of pan and paper, dust with flour

2) mix four, cocoa, baking soda, and salt. In another bowl beat butter, sugar and brown sugar at medium speed until fluffy. Add eggs, 1 at a time beating after each egg, add vanilla

3) At low speed, alternately bead flour mixture an buttermilk into butter mixture just until blended. divide batter equally between pans.

4) Bake for 25-30 minutes until toothpick inserted into middle comes out clean. Cool on wire rack for 10 minutes then turn cake onto racks, remove wax paper, turn layers top side up and cool completely.

5) For frosting, beat butter and powdered sugar at medium speed until light and fluffy. Add melted chocolate and vanilla, beat until smooth and shiny

6) put on layer on serving platter, spread with frosting, place next layer on top and spread with remaining frosting, add shavings if desired.

Rocky Road Cake

This is what happens when you don't have all the ingredients for the original recipe. Started out to make Rocky Road cupcakes, but, no cupcake holders or peanuts. So we went with a cake and peanut MM's instead!









What you need:

One devil's food cake mix
-bake any shape you would like
-mini marshmallows
-peanut MM's

Frosting:
1 bag of powdered sugar
1/2 cup cocoa powder
3 Tablespoons butter
water
1 pkg instant cappuccino mix
mix all dry ingredients together, add butter, and water until smooth, but will still hold shape
frost cake, add peanut MM's and mini marshmallows on top and sides! NOTE: I usually don't measure my ingredients, so frosting is just a guess as what I used.

original rocky road cupcakes called for chocolate chips, mixed nuts, and mini marshmallows for topping.
